The quicker the scramble to make something with them before they turn completely to mush.

My original plan was to make my orange chocolate chip banana bread but I blinked and my bananas were already almost too ripe!

It’s right before the holidays so I’ve been in a “clean out the pantry” state of mind and so, not having the ingredients for the orange chocolate chip recipe—and not wanting to just make banana bread—I decided to bake up a delicious Banana Pound Cake!

This banana pound cake is super moist. It’s sweeter and more buttery than plain ol’ banana bread.

The next time you find yourself with a batch of dark, ripe bananas—do yourself a favor, bake a cake!

What You Need To Make This Banana Pound Cake:

◉ Bananas

◉ Sugar

◉ Butter

◉ Sour Cream

◉ Eggs

◉ Salt

◉ Vanilla

◉ All-Purpose Flour

◉ Baking Powder

◉ Canola Oil (for preparing Bundt pan)

How To Make Banana Pound Cake:

Step one—Preheat oven to 375°

Step two—Prepare Bundt pan: brush pan with canola oil, coating all sides, nooks, and crannies. Then, coat pan with layer of sugar.

The easiest way to do this is to add about 1/2 cup sugar to pan, cover it with plastic wrap, and shake to coat. You want a uniform layer of sugar.

Step three—Add banana, sugar, butter, vanilla, and sour cream to a large mixing bowl; stir. Then, whisk in eggs, adding them one at a time.

Step four—In a separate bowl, sift flour, baking powder, and salt together.

Step five—Stir banana mixture into flour mix; pour into prepared pan.

Step six—Bake at 375° for 30 minutes then, lower temperature to 350° and bake for an additional 30 minutes.
