Crispy Sausage Stuffed Acorn Squash

  1. Slice acorn squash in half and remove seeds.
  2. Fill a baking pan to 1/2 inch with hot boiling water; place squash—cut side down—in pan, cover with foil, and steam for 30 minutes at 400 degrees.
  3. While the squash cooks, brown sausage; drain off fat.
  4. Add red pepper, onion, bread crumbs, paprika, garlic powder, salt and pepper to sausage.
  5. Season squash halves with salt and pepper; fill centers with sausage mixture.
  6. Reduce oven heat to 375 degrees and bake—uncovered—for 30 minutes.
