Preheat oven to 375°
Prepare Bundt pan: brush pan with canola oil, coating all sides, nooks, and crannies. Then, coat pan with layer of sugar.The easiest way to do this is to add about 1/2 cup sugar to pan, cover it with plastic wrap, and shake to coat. You want a uniform layer of sugar. Add banana, sugar, butter, vanilla, and sour cream to a large mixing bowl; stir. Then, whisk in eggs, adding them one at a time.
In a separate bowl, sift flour, baking powder, and salt together.
Stir banana mixture into flour mix; pour into prepared pan.
Bake at 375° for 30 minutes then, lower temperature to 350° and bake for an additional 30 minutes.
