Slow Cooker French Onion Pot Roast

Ingredients

  • 2 lb Chuck Roast
  • Seasoned Salt see instructions for amount
  • Black Pepper see instructions for amount
  • Garlic Powder see instructions for amount
  • Onion Powder see instructions for amount
  • 2 Yellow Onions sliced
  • 3 stalks Celery sliced
  • 1 lb Baby Carrots
  • 2 cans French Onion Soup
  • 1 pack Lipton's Beefy Onion Soup Mix
  • 1 1/4 cups Ketchup
  • 2 tbsp Red Wine Vinegar
  • 1 stick Butter melted
  • 2 tsp Cayenne Pepper
  • 1 tbsp Corn starch
  • 1 tbsp Water

Instructions

  • Season chuck roast on all sides with seasoned salt, black pepper, onion powder, and garlic powder. You want an even layer of seasoning on each side. Rub it int the meat. Don't be afraid to be a little heavy handed.
  • Add yellow onion, celery, and baby carrot to bottom of your slow cooker; place chuck roast on top.
  • Whisk remaining ingredients together and pour over chuck roast and vegetables; lift up the roast on the corners to let more of the liquid flow onto the vegetables.
  • Cook on low for 8-10 hours.
  • Remove meat and vegetables from slow cooker and pour remaining juice into a saucepan; cook on medium heat for ten minutes. Dissolve cornstarch in water, whisk mixture into gravy, and stir until thickened.
