Potato Salad with Ranch Dressing and Eggs

Ingredients

  • 4 large white potatoes
  • 4 large hardboiled eggs
  • 1 red onion
  • 1/2 cup shredded colby jack cheese
  • 1/4 cup bacon bits
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried dill
  • 1 tsp onion powder
  • 1/2 cup ranch dressing
  • 1/4 cup mayonaisse
  • 1/2 tsp dried parsley

Instructions

  • Peel and place potatoes into a medium sized saucepan, cover with water, and add about 1 tsp salt to saucepan. Bring to boil and boil potatoes for 12-15 minutes or until potatoes are fork tender. Remove from pan and let cool.
  • Meanwhile, mix remaining ingredients in a large mixing bowl, toss lightly, and set aside.
  • Once potatoes have cooled, cut them into bite-sized pieces, and add them to the ranch dressing mixture. Stir until well incorporated. Serve warm or chilled.
