Parmesan Broccoli and Ham Salad

Ingredients

  • 12 oz Broccoli Florets chopped
  • 8 oz Diced Ham
  • 5 oz Shredded Parmesan
  • 6 slices Bacon thick-cut
  • 15 oz can Chickpeas no salt added
  • 1/2 Red Onion diced
  • 1 Orange or Red Bell Pepper diced
  • 1/4 cup Light Sour Cream
  • 1/4 cup Mayonnaise
  • 1 tbsp Spicy Brown Mustard
  • 1 tbsp Sugar
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Smoked Paprika
  • 1/4 tsp Chili Powder
  • 1/4 tsp Cayenne Pepper

Instructions

  • Cut bacon into bit sized pieces, fry until crisp, and set aside, allowing bacon to drain for at least five minutes.
  • Place broccoli, ham, parmesan, bacon, chickpeas, bell peppers, and red onion into a large mixing bowl. Season with garlic powder, onion powder, cayenne pepper, chili powder, and smoked paprika. Stir well.
  • Add sour cream, mayonnaise, spicy brown mustard, and sugar to bowl and stir until fully combined.
