Banana Rum Bread
Molasses, rum, and cinnamon come together to make this perfectly moist, semi-dense banana bread that’s easy to make and best served sliced in thick slices slathered with butter or, if you’re feeling flossy, a drizzle of honey.

  1. Preheat oven to 325 degrees.
  2. Combine softened butter, molasses, and oil; add eggs one at a time. (Don’t worry if the mixture is lumpy.)
  3. In a different mixing bowl, mash bananas with water; stir in rum extract.
  4. In a different mixing bowl, mix flour, baking soda, baking powder, and salt.
  5. Stir banana mixture into molasses mixture then, add dry ingredients and stir until just moistened.
  6. Mix ⅓ cup sugar and cinnamon.
  7. Pour half batter into greased loaf pan, sprinkle with half of the cinnamon sugar. Marble using a fork, swirling the cinnamon sugar into the batter. Top with remaining batter and cinnamon sugar and marble again.
  8. Bake for 1 hour.
