Italian Chicken and Rice Bake

Ingredients

  • 3 cups rotisserie chicken chopped
  • 1/2 cup long grain white rice cooked
  • 1 large yellow onion
  • 14.5 oz can diced tomatoes
  • 4 oz can mushroom stems and pieces drained
  • 1 1/2 tbsp Italian seasoning
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic salt
  • 4 tbsp butter softened
  • 1 tsp Worcestershire sauce
  • 2 cup mozzarella cheese shredded
  • 1 large egg white stiffly beaten

Instructions

  • In a large bowl, mix chicken, rice, mushrooms, onion, tomatoes, Italian seasoning, onion powder, and garlic salt until well incorporated; spread in a shallow casserole dish.
  • Cream butter; mix in worcestershire sauce, cheese, and then fold in egg white.
  • Spoon over casserole dish.
  • Bake at 425 degrees for 25 minutes.
