Peel and place potatoes into a medium sized saucepan, cover with water, and add about 1 tsp salt to saucepan. Bring to boil and boil potatoes for 12-15 minutes or until potatoes are fork tender. Remove from pan and let cool.
Meanwhile, mix remaining ingredients in a large mixing bowl, toss lightly, and set aside.
Once potatoes have cooled, cut them into bite-sized pieces, and add them to the ranch dressing mixture. Stir until well incorporated. Serve warm or chilled.
