Potato salad is one of, if not the most, customizable side dishes in the world.

You really can’t go wrong! Well, as long as you’re only cooking for your tastes—if you decided to add corn chips and caviar to the batch of potato salad you made for a potluck at work…be prepared to never be asked to make the potato salad again.

The sole purpose of this recipe is to impart more flavor in your potato salad without having to pick up anything out of the ordinary. I usually have ranch in my fridge. So, switching that in for mayonnaise was a no brainer for a quick potato salad upgrade.

What You Need to Make Potato Salad with Ranch Dressing and Eggs:

◑ White Potatoes

◑ Hardboiled Eggs

◑ Red Onion

◑ Colby Jack Cheese

◑ Bacon Bits

◑ Black Pepper

◑ Salt

◑ Dried Dill

◑ Onion Powder

◑ Ranch Dressing

◑ Dried Parsley

How To Make Potato Salad with Ranch Dressing and Eggs:

Step one—Peel and place potatoes into a medium sized saucepan, cover with water, and add about 1 tsp salt to saucepan. Bring to boil and boil potatoes for 12-15 minutes or until potatoes are fork tender. Remove from pan and let cool.

Step two—Meanwhile, mix remaining ingredients in a large mixing bowl, toss lightly, and set aside.

Step three—Once potatoes have cooled, cut them into bite-sized pieces, and add them to the ranch dressing mixture. Stir until well incorporated. Serve warm or chilled.

  • 4 large white potatoes
  • 4 large hardboiled eggs

  • 1/2 cup shredded colby jack cheese
  • 1/4 cup bacon bits
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried dill
  • 1 tsp onion powder
  • 1/2 cup ranch dressing
  • 1/4 cup mayonaisse
  • 1/2 tsp dried parsley

Instructions
