Minted Lime Cucumber Salad

Instructions
Layer cucumbers in a paper towel lined bowl, sprinkling salt on each layer. Let sit for 10 minutes. Remove paper towels from bowl and drain any excess liquid off of cucumbers.
Toss red onion, cucumbers, and mint together in a large bowl.
Whisk remaining ingredients together; pour over cucumber mix, cover, and chill for at least one hour.
