This is my go-to recipe when it comes to getting more fiber and protein in my diet! It’s super easy-to-make. Beans – soak em’ , boil em’, season em’ and blend em’! Stir in ham and top with diced hard boiled egg. Huzzah! You’ve got yourself a filling, hearty bowl full of delicious, nutritious white bean and ham soup. It’s no frills, no fuss, and you can forget about having a sink full of dishes to clean when you’re done.

White Bean and Ham Soup
An easy-to-make soup filled with hunks of ham and brimming with flavor! It's hearty, filling, and perfect for a chilly fall night. Top with a chopped hard boiled egg and some hot sauce and you are in business!

Instructions
  1. Wash and rinse beans.
  2. Add beans and 3 cups of chicken broth to soup pot. Boil for 2 minutes; soak for 1 hour.
  3. Add remaining chicken broth and onion to pot; bring to a boil, lower heat, and simmer until beans are tender. (approx 40 minutes)
  4. Blend soup until smooth.
  5. Pour soup back into soup pot, add remaining ingredients to the pot, and let simmer for an additional 10 minutes.
