Potatoes roasted in a skillet with onion, red peppers, smoked paprika, dill, and an ample amount of butter? Sounds good to me. Complementing everything from bacon and eggs to roasted chicken and green beans, this dish is perfect for breakfast, lunch, or dinner.
You know...I think they might be!
Potatoes hold onto flavor in a way that's different from bread, rice, or pasta; anything you add to potatoes sticks to them, coating them in flavor which is absolutely the case for these Skillet Potatoes with Smoked Paprika and Dill.
In this recipe, the potatoes—covered in butter and seasoned with smoked paprika and dill—sizzle in a skillet and then, get baked for a little while; allowing the flavors to meld together, creating one big flavor bomb.
I'm making a note to use smoked paprika and dill on my next loaded baked potato or sprinkled on french fries.
Your options are endless!
I served these with bacon, scrapple, eggs, and grits! Yep, a big ol' delicious brunch. I made my husband a stack of pancakes and it was a done deal.
And I could easily see serving these with baked chicken, green beans, and buttermilk biscuits or with smothered pork chops and bacon wrapped asparagus.
