Blueberry Citrus Upside-Down Cake
This Blueberry Citrus Upside-Down Cake is a new take on a vintage classic, swapping fresh blueberries for canned pineapple and balancing the whole thing with an electric, lemon tang. This cake comes together in no time and is perfect for any occasion, especially if blueberries are in season.
What You Need To Make Blueberry Citrus Upside-Down Cake:
- Yellow Cake Mix
- Blueberries
- Lemon Juice
- White Sugar
- Brown Sugar
- Butter
How To Make Blueberry Citrus Upside-Down Cake:
Step One—In a large mixing bowl, combine the blueberries, white sugar, and lemon juice; let sit for at least 15 minutes before continuing recipe.
Step Two—Preheat oven to 350 degrees.
Step Three—Prepare cake mix according to box.
Step Four—Melt butter in 13×9-inch pan in oven. Sprinkle brown sugar evenly over melted butter; give blueberries a good stir and then pour them over butter and brown sugar mix.
Step Five—Pour cake batter on top and bake for 45 to 60 minutes; run a knife around the edges of the cake.
Step Six—Place serving dish over top of pan and flip cake onto it. Leave pan over dish for a few minutes before serving. (This allows the glaze to drip into cake instead of running down its sides.)
