Chicken Fajita Spaghetti – Succulent sautéed chicken and roasted onions and bell peppers simmered in a tomato based sauce with cumin, oregano, chili powder.

This dish isn’t fusion of flavors but fusion of technique. It’s taking sizzling fajitas and roasting the ingredients bringing out a sweeter, richer flavor and then, simmering them in tomato sauce with cumin, oregano, garlic, and chili powder—taking the flavor to an even higher level. Now, take that sauce and serve it over spaghetti noodles—chickpea spaghetti noodles in my case (great way to get in some extra protein)—and you’ve got a home cooked dish that’s full of flavor and eats like it’s Wednesday night at your grandma’s house. It’s comfort food with a twist.

What Should You Serve With Chicken Fajita Spaghetti?

The dish itself is full of veggies, carbs, and chicken so you don’t need anything more than a hearty piece of bread and a side salad.

If you’re like me and you keep track of your macronutrients eating this dish over chickpea spaghetti noodles and served with three eggs scrambled in a tablespoon of butter brings your fat/carbs/protein closer to a 30/30/30 split.

This Chicken Fajita Spaghetti Gets It’s Flavors From:

◉ Chicken breasts

◉ Bell Peppers

◉ Yellow Onions

◉ Fajita Seasoning

◉ Tomato Sauce

◉ Olive Oil

◉ Salt and Pepper

Step By Step: How to Make Chicken Fajita Spaghetti

Step one—Toss sliced bell peppers and onions with one tablespoon olive oil; season with salt and pepper. Then, spread out on a foil lined baking sheet and broil for 15 minutes.

Step two—In a large frying pan, sauté chicken in remaining olive oil until there’s no pink color left.

Step three—Add chicken, peppers, onions, crushed tomatoes, fajita seasoning, and water to large sauce pan and let simmer for 10 minutes.

Step four—Plate spaghetti, top with sauce, and enjoy!*

*I added chopped romaine lettuce and sour cream to my plate. Don’t be afraid to experiment by taking other fajita toppings and adding them on top of your spaghetti.

Ingredients

  • 1 lb boneless skinless chicken breast sliced
  • 1 yellow onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 2 tbsp olive oil divided
  • 1 1.12 oz packet fajita seasoning
  • 29 oz can no salt added tomato sauce
  • 12 oz spaghetti noodles prepared as directed on the box

Instructions
