Christmas already?

Well, no…not quite. It’s right around the corner though.

Crab casserole is a staple dish on my family’s holiday dinner table.

You know the feeling at the end of musical chairs where there’s just you and some other person, and you’re both fiercely focused on sitting in that chair when the music goes off?

That’s how it feels when the crab casserole is placed on the table.

We all stand around the table with big smiles, holding hands with our heads bowed while my aunt’s husband says the prayer; silently counting down to the moment he’s done so we can all pile food onto our plates—counting down to the moment the serving spoon digs down into the crab casserole and scoops a fat heap of it onto the plate; counting down to that first bite.

It’s heavenly.

This crab casserole is NOT my grandmother’s recipe. Perhaps, someday I’ll hook you up but today you’re getting my middle of summer and I have a craving but don’t want to indulge too much crab casserole with pasta recipe. It hits the spot but doesn’t break the bank—Grandma spends like 40 bucks on crab meat alone, ain’t nobody got the grocery budget for that!
