The truth is…

I’m not a pot roast fan.

Most of the recipes I’ve tried are one note in flavor. It’s just beef flavored meat and vegetables and while that’s all fine and good, it leaves something to be desired for me.

But my husband LOVE pot roast!

So…I’m on a journey to create pot roast recipes that appeal to the BOTH of us. Recipes that bring me joy when my husband want me to make a pot roast instead of begrudgingly writing the ingredients onto next week’s grocery list.

And by golly, I think I’ve done it!

This slow cooker French onion pot roast is varied in flavor! It’s rich, savory, a little sweet, and perfectly seasoned. It’s also super easy to make. Slap on some seasoning, add veggies, pour in the sauce, and into the slow cooker it goes! A few hours later you’ve got a delicious dish that’s perfect with mashed potatoes or rice! Yum!

What You Need To Make Slow Cooker French Onion Pot Roast:

◉ chuck roast

◉ seasoned salt

◉ black pepper

◉ garlic powder

◉ onion powder

◉ yellow onion

◉ celery

◉baby carrots

◉ Campbells French onion soup

◉ Lipton beefy onion soup mix

◉ ketchup

◉ red wine vinegar

◉ cayenne pepper

◉ butter

How To Make Slow Cooker French Onion Pot Roast:

Step one—Season chuck roast on all sides with seasoned salt, black pepper, onion powder, and garlic powder. You want an even layer of seasoning on each side. Rub it int the meat. Don’t be afraid to be a little heavy handed.

Step two—Add yellow onion, celery, and baby carrot to bottom of your slow cooker; place chuck roast on top.

Step three—Whisk remaining ingredients together and pour over chuck roast and vegetables; lift up the roast on the corners to let more of the liquid flow onto the vegetables.

Step four—Cook on low for 8-10 hours.

Step five—Remove meat and vegetables from slow cooker and pour remaining juice into a saucepan; cook on medium heat for ten minutes. Dissolve cornstarch in water, whisk mixture into gravy, and stir until thickened.

  • 2 lb Chuck Roast
  • Seasoned Salt see instructions for amount
  • Black Pepper see instructions for amount
  • Garlic Powder see instructions for amount
  • Onion Powder see instructions for amount
  • 2 Yellow Onions sliced
  • 3 stalks Celery sliced
  • 1 lb Baby Carrots
  • 2 cans French Onion Soup
  • 1 pack Lipton's Beefy Onion Soup Mix
  • 1 1/4 cups Ketchup
  • 2 tbsp Red Wine Vinegar
  • 1 stick Butter melted
  • 2 tsp Cayenne Pepper
  • 1 tbsp Corn starch
  • 1 tbsp Water

Instructions
